The original bakery who makes our Sourdough Hempzels® brand is not a massive state of the art - climate controlled facility. It's the Old Fashioned, Back Ally Bakery that started in the 1950's and is still producing great tasting pretzels and especially our Hempzels®. Original, Garlic, now Jalapeno 8oz Bags - 

Once the pretzel is baked & off loaded at the oven they are Kiln dried  to remove moisture because moisture affects the crunchiness, the snap and if the weather has been wacky than the Hempzels® could be harder or less crunchy - over 20 years we've produced better vs worse - thanks to the Revonah facility for their dedication to making great tasting Hempzels® Sourdough Pretzels for us since 1997.
